Can I show my Google reviews and measure my website visits?
Yes: there is a section that pulls in your Google reviews, and analytics is configured in Site settings.

For reviews, add the testimonials section in the editor and connect it to your Google listing by searching for your business name: your rating and your real reviews are pulled in. They do not refresh on their own: when you want the new ones, press refresh in that section. It is available on the plans that include this feature.
For visits, in My website › Site settings you can enable analytics and paste your Google Analytics or Tag Manager id. No code needed.
Analytics only loads if the visitor accepts cookies, with the notice your website already includes. That is why your numbers may be slightly lower than the people who actually visit: it is what the law requires, and complying is cheaper than a fine.
If you only want to know how the business is doing (appointments, revenue, where bookings come from), that is in Statistics and does not depend on any external tool.
